FATTY ACIDS AND TRIGLYCERIDES AS NUTRIENTS: DAILY ALLOWANCES
The requirement for linoleic acid can be met if 1 to 2 per cent of the calories are derived from appropriate fats; that is, 15 to 25 gm fat daily – in the adult diet. Other than this there is no specific quantity of fat that is needed. Throughout the world the fat intake varies widely. For example, people in some Asian and African nations consume as little as 10 to 20 per cent of their calories from fat, whereas other people, such as Eskimos, eat large quantities of fat.
On the average, Americans obtain more than 40 per cent of their calories from fat. However, as you would expect, the intake varies widely. Some people eat many fried foods, pastries, rich desserts, cream, salad dressings, butter, and margarine, while others consume very little of these high-fat foods. A typical cholesterol intake ranges from 500 to 800 mg daily, but the American who consumes two eggs or more a day plus large servings of meat and other cholesterol-rich foods may ingest in excess of 1000 mg cholesterol daily.
Many scientists and clinicians agree with the recommendations set forth in the Dietary Goals:
1. Include not more than 30 per cent of calories from fat.
2. Decrease saturated fats to no more than 10 per cent of calories; increase polyunsaturated fats to about 10 per cent of calories.
3. Restrict cholesterol to about 300 mg per day.
To bring about these changes in the diet, the following steps are taken: skim milk and skim-milk cheeses instead of whole milk and whole-milk cheeses; moderate portions of low-fat meats, poultry, fish; 3 to 4 eggs per week; oils, margarines, salad dressings high in polyunsaturated fatty acids. Such changes in the diet can be readily made with available foods in the market; they are palatable, safe, and potentially beneficial.
