FATS AS NUTRIENTS FOR YOUR BODY: CLINICAL PROBLEMS; SOME FALLACIES AND FACTS
Clinical problems
Because fats are a concentrated source of calories, it is very easy to consume calories in excess of one’s needs. Thus, the person who uses extra teaspoons of butter, margarine, or salad dressing – not to mention fat-rich sauces and desserts – may rapidly find obesity to be a problem.
Fats and oils do not provide protein, minerals, and vitamins. As their intake is increased, it becomes more difficult to obtain these essential nutrients without exceeding the caloric limit.
Diets rich in saturated fat and/or in cholesterol tend to lead to increased serum cholesterol levels. Some estimates indicate that at least half of all Americans have serum cholesterol levels that are above desirable levels. The elevation of blood lipids is associated with increased incidence of coronary heart and blood vessel disease. An association has also been made between high-fat intakes and the incidence of cancer of the colon and of the breast, but more evidence is needed to establish this with certainty. In diseases of the gallbladder and pancreas fats are poorly tolerated.
Some fallacies and facts
1. Fallacy. Fried foods are hard to digest.
Fact Digestion of fried foods is as complete as that of other foods. However, because fat coats the food particles, the digestion of fried foods takes somewhat longer.
2. Fallacy. Mineral oil is a good substitute for regular oil in low-calorie salad dressings. Fact. Mineral oil is not absorbed through the intestinal wall and thus provides no calories. However, it interferes seriously with the absorption of fat-soluble vitamins D, E, and K. Therefore, it should never be used in food preparation.
3. Fallacy. Vegetable oils without additives are more nutritious than those preserved with an antioxidant.
Fact. The unsaturated fatty acids in vegetable oils are rapidly oxidized in the absence of antioxidants; this results in rancidity of the oil. Tocopherols (vitamin E) are among the most effective antioxidants, and any excess in the oils enters into the normal metabolism of vitamin E.
4. Fallacy. Vegetable oils are less fattening than solid fats.
Fact. Oils and solid fats are equally high in calories; that is, each gram of fat from either source furnishes 9 kcal.
5. Fallacy. Sour cream is lower in calories than sweet cream.
Fact. Sour cream has the same number of calories as the sweet cream from which it is made. Usually sour cream is made from light cream.
6. Fallacy. Lecithin supplements should be added to the diet in order to meet the needs for synthesis of brain and nervous tissue.
Fact. The liver readily manufactures lecithin to fully meet the needs for cell membranes and for the synthesis of nervous tissues.
