FOOD AND NUTRITION: DAILY NEEDS FOR CABBOHYDRATES
The exact carbohydrate needs of the body have not been established. It is well known that some people in the world maintain good health with extremely high intakes of carbohydrate while others are equally healthy on diets very low in carbohydrate. Generally, the daily diet should contain not less than 100 gm carbohydrate. This is more than sufficient to supply the glucose needed by the central nervous system and for the effective oxidation of fats.
Typical American diets furnish 46 per cent of calories from carbohydrate: 22 per cent from complex carbohydrates, 6 per cent from naturally occurring sugars, and 18 per cent from processed sugars. The United States Dietary Goals recommend that the carbohydrate intake be increased to about 58 per cent of calories with the following specific goals:
1. Increase consumption of complex carbohydrates and naturally occurring sugars to about 48 per cent of calories.
2. Reduce consumption of refined and processed sugars to about 10 per cent of calories.
