WATER-SOLUBLE VITAMIN: B-COMPLEX VITAMINS
Biotin
Biotin occurs in extremely minute amounts in the body and in foods. It is required for many enzymes that participate in the metabolism of carbohydrates, fats, and amino acids. It is closely related to folacin and pantothenic acid in its activities.
The adult allowance for biotin is 100 to 200 micrograms. Average diets supply 100 to 300 mcg daily. A protein, avidin, found in raw egg white is an antagonist to biotin. The protein combines with biotin in the small intestine and prevents the absorption of the vitamin. However, the amount of egg white that needs to be ingested to bring about this effect is far in excess of the number of eggs that would be eaten in a day. No deficiency of biotin has been observed on typical American diets.
Pantothenic acid
This vitamin is part of a complex enzyme known as coenzyme A. This enzyme is an important key to the breakdown of carbohydrates and fats to produce energy. It is also involved in the synthesis of fatty acids, cholesterol, and steroid hormones; in the synthesis of heme in the hemoglobin molecule; and in the formation of acetylcholine, a compound needed for the transmission of nervous impulses.
The adult allowance for pantothenic acid is 4 to 7 mg. The word pantothenic means “from everywhere” and the vitamin is widely distributed in foods. Deficiency of pantothenic acid occurs only when there is severe deficiency of other vitamins. Meat, whole-grain cereals, and legumes are rich in the vitamin; milk, fruits, and vegetables contain moderate amounts.
