Why turn a low-fat food into a high-fat food? The way you cook can greatly increase the amount of fat in your diet.
Here are some handy hints for low-fat cooking.
Meat, chicken and fish
Before cooking:
Trim all fat from meat.
Remove skin from chicken.
Keep portions small.
Cooking methods:
Grill.
Wrap in foil and bake.
Microwave.
Use a non-stick pan.
Roast or bake on a rack.
Casserole.
Shallow fry in small amount of polyunsaturated oil.
After cooking:
Chill meat casseroles or mince dishes and spoon off the fat once it has become solid.
Take care not to add extra fat, e.g. sour cream, butter, margarine, mayonnaise, gravy made with fat.
Vegetables
Steam, microwave or boil in small amount of water.
Bake in foil with a small amount of polyunsaturated oil.
When browning or stir-frying substitute a little water or stock for fat and use a non-stick pan.
Season with herbs and spices rather than sauces, margarine or butter.
Try lemon juice on salads or use low-calorie commercial salad dressings.
Take care not to add fat after cooking, e.g. margarine or butter to potatoes, vegetables, spaghetti.
Other lower-fat alternatives
With a few simple changes many of your favourite dishes can be prepared the ‘low-fat way’.
Use low-fat natural yoghurt or buttermilk in recipes that call for sour cream or mayonnaise.
Use skim milk instead of whole milk in puddings, soups, baked goods, etc.
Use evaporated skim milk or skim milk blended with ricotta cheese in place of cream.
Use low-fat cottage cheese instead of cream cheese.
Substitute polyunsaturated margarine or oil for butter in recipes and reduce the amount.
